Chocolate Chips Muffin

Cake-like Chocolate Brownie

These are what I have been baking over the months. These are the successful bakes, there are many unsuccessful ones which are not posted :p

What I have learned is that, you just have to keep trying :)

Matcha Chocolate Chips Muffin
The recipe is here. Thanks Spear for the yummy recipe.

Decorative Cupcake
I made these cupcakes at the cupcake decorating class at Sugar Inc. It is quite an interesting class. The key to decorating the cupcake is to be neat. You need to clean the color off your hands each time before you start working on a new color. It will be handy to keep a clean damp cloth next to you. It is indeed very fun working on the fondant, making roses and bows etc. But it takes up a lot of time :p

No Knead Cinnamon Rolls
The recipe can be found here. I found it very challenging to work with the dough, it is extremely sticky. As you can see from the photo, my cinnamon rolls are out of shapes :p Despite the appearance, it tasted great! Hubby and kid gave the thumbs up to this :) Thanks HHB for sharing this magical recipe :)

Chocolate Chips Muffin
Thanks to Jane's for this recipe. This is a fairly easy recipe. This is the first time I've baked a muffin using rub-in method. It is very easy to put them together :) perfect for beginners like me :)

Below is Jane's recipe which I have translated into English.

Ingredients:
50g butter (cut into cubes)
70g castor sugar
120g cake flour
1 teaspoon baking powder
30g chocolate chips
1 egg
70g fresh milk
1/3 tsp pure vanilla essence

Method:
1. Rub butter into shifted cake flour and baking powder until mixture resembles bread crumbs.
2. Add chocolate chips and mix well.
3. In a separate bowl, mix egg, vanilla essence and fresh milk together.
4. Add 3 into 2. Mix together. Do not overmix. It is ok if the batter appears lumpy.
5. Pour batter into muffin cups and bake in pre-heated oven at 180 degree celcius. Bake for 15 mins.

Viola :)

Keep baking! :)
